Farmers Market

After a visit to the farmers market over the weekend I baked some delicious zucchini bread.  We have been trying to eat more organic, fresh, and nutritious foods in our house and that means more frequent trips to the market. Zucchini bread may not be the healthiest choice of foods to make, but it's a comfort food and I couldn't resist.

I'm confused.. you say zucchini bread but show 'white eggplant'.. I was hoping you did mean eggplant because I sure love that and always wondered how it would be in a 'bread'....
